Ingredients

2 cups of Coconut Milk

3 cups of Rice

1 table spoon of Soy sauce

1 table spoon of olive oil
-
1 Onion
-
1 teaspoon of Garlic powder
-
1 teaspoon of Ginger powder
-
1 table spoon of Curry powder
-
1 cup of water
-
1 scotch bonnet
-
2 Knorr cubes
-
160g of raw and peeled prawns
-
1 cup of frozen mixed vegetables
Directions
Dice onions, scotch bonnet and set aside
Rinse rice till the water runs clean
Add the crushed knorr cubes and salt to taste
Finally add the curry powder and leave the cook
Transfer the washed rice, coconut milk and water into the rice cooker
While, the rice cooks, add the olive oil to a pan
When hot, transfer the raw prawns to the pan along with the soy sauce. Sautée the prawns for 3 minutes, then transfer to a dish
Add the diced onions and scotch bonnet to the empty pan, and sautée for 2 mins
Add the garlic powder and ginger powder, fry for 2 mins
Add the frozen vegetables and fry for another 2 mins
Add the cooked rice to the pan and mix thoroughly
Add the prawns, mix and allow steam for 3 minutes
Viola!!! Your coconut rice is ready to be served
